There is no such thing as too much pork - in that spirit, the Liberty Hotel is once again hosting Cochon 555. On Sunday, March 28th chefs Jamie Bissonnette of Toro and Coppa, Barry Maiden of Hungry Mother, Tony Maws of Craigie on Main, Joseph Margate of Clink and returning champion Matt Jennings of Providence's Farmstead will all work their culinary magic on their very own 125 pound heritage pigs - all in the effort to brine, grill, braise and cure their way to being crowned Prince of Porc (and get invited to compete at the Grand Cochon during the Food & Wine Classic in Aspen). Guests will have the chance to sample every dish, along with some fabulous wines, before a panel of judges (including culinary heavyweights like Ken Oringer, Jason Bond, Will Gilson and Lydia Shire) decide who prepares the most perfect porcine pleasure.
